I do use Hitchcocks and I think they do a fair job.  Never had any major issues.  They are on the pricier side but there's not a lot of options in AACO so I think it's just a supply and demand issue.  Butchering my own isn't really an option right now with two young kids.  By the time I get home its game on with dinner, baths, bed etc....

I will say, the shoulder mount they did for me was outstanding.

My shop is a good place, after sitting in a walk in box for a minimum of 14 days at 37°. If you ain't aging deer you ain't eating!

If he's still in business, Wayne Howard (dba Hunters Edge) in Linthicum does outstanding work.

Debones everything, vacuum packs, freezes. Dude's an artist with a knife.

Tried Hitchcock last year since it was recommended by a fellow hunter. Was not happy with the butcher shop, the cuts of meat look like they were done by someone who did not care or maybe a first timer. Also, had a piebald hide tanned which came back with extra holes in it and the skin discolored. Will not be back.

Butcher my own deer if I have the time (my Dad worked with me very early. He worked for a butcher when he was in his 20's and nothing went to waste)...."M&G" if I'm in MD and don't have the time and "Flying W" in WV if I don't have the time.

I actually like butchering my own deer but time is an issue and standing is a problem now.
It's nice to have a dependable butcher you like and trust.

It was early muzzleloader and they were busy, but I said I wanted the head for euro.  One of the guys stopped skinning took his knife and in less than 30 seconds said...here you go have a nice day, and away I went.

Took my biggest buck ever there on sunday Nov. 5. Basic cuts and wanted the head back for a shoulder mount. They gave me back the whole cape with head and legs!!! Not many places would do that!!! Great bunch of guys!!!!

      A guy off Rt 9 is a true butcher/ Slob/Pig/drug doing A-HOLE. One on my customers drove all the way down there just the other day and the place was closed. All 3 phone numbers ,leave message after telling him to drop it off at that pacific time, WTF. The guy is a first class PIG, dirty, steals meat to replace others missing meat.       A place in Pa behind Booths Corner Farmers market is another slob, dirty, a liar, and very dishonest. Found out later no cooler or freezer. Took a couple deer there to try. When I went back I saw rats all over his shop through the window, disgusting. One rat eating right out of his burger grinder. Didn't see this when I dropped it off, some one was there. When I went to pick it up is when I saw the rats. I called him, he was drunk , told me they were 50.00 each and when I went to pick them up it was 85.00 each. Told him to stick them and I called the Game commission, the officer I spoke with told me he takes his deer there, I hung up. That place was the most disgusting shop I have ever been to.
    Another Pa shop needs a skinning lesson, lots and lots of meat left on the skin/cape and about 18 inches of neck/chest left on the deer hide if to be mounted and an additional 25.00 charge for that mess. Place was clean but they need to learn the trade. Also very expensive, $150.00 vacuum sealed.
    A down state De. butcher is another mess, dirt floors in a barn, Your cape is full of stones, dirt, grass, mud if it has rained, pretty messed up.The guy after 20 years still doesn't know how to skin. He does an ok job cutting but skinning is another story. He leaves so much meat on the hide that it's a joke, eatable meat. Charges 25.00 to cape for mount and leaves about 10/25 pounds of neck in cape, that is GOOD meat wasted.
    One more idiot off the top of my head is in Pa. another CLASS ACT BUTCHER, behind Walmart near Kennet Square, if you like hair in your meat he is your man. Works out of his garage, $125.00 but it is vacuum sealed complete with hair. His thing is you can wash it off before you cook it, WTF. He only has a refrigerator so you only have 24 hours to pick up or it's donated, that's his thing. He does the cleanest skin job I have seen though, does it with a winch from the ceiling, not one piece of meat on hide/skin, perfect job.
    Then you had one of the good guys, Charlie of Charlie Custom Cut's in Md. Cleanest shop around, I use to drive all the way down there for years, I liked Charlie. I didn't like the fancy foam trays he used for packing. Leaves too much air in the package so meat freezer burns fast, unless you eat it fast. It's a shame his shop is no more I was told.
    My butcher/ meat cutter off Rt 202 & Rt 1 does his skinning as fast as possible washes down the deer and right into the cooler to hang for a few days, hanging is a plus in my book. He charges $15.00 to cape and I see why. He cuts them all the way to the chin regularly, easy to skin on the skinning rack, if to be mounted he tubes it to the skull, gives you the entire hide so your taxidermist can choose the length of cape he needs, maybe longer for a pedestal mount or half body maybe. When there is twenty or more deer to be skinned and more coming in it takes longer to skin for a cape so $15.00 isn't bad at all specially in the condition it's in when the taxidermist gets it, clean, no cuts entire hide. He also skins them perfect with very little meat if any left on the hide. Then the 3 of them "all family" Cut/Wrap/Pack & bag each deer one at a time, never a mix-up or missing meat. Freezer paper is the real way next to vacuum sealing. They are as clean as possible, place gets washed down EVERY night after cutting all day. Two big coolers running 24/7 and a big freezer for finished meat. You can drop off any hour, security cameras & lights in place so no missing anything. They have all the processed meat available, balogna, ring bologna, sausage/italian/regular, Lebanon balogna, jerky. They have also been in business for over 60 years. They know how it's done.

Amen, Charlie. He was my first butcher and set the standard VERY high!

Not only is his workspace spotless, but I was spoiled by the combo-locked coldbox for drop off ANYTIME!!

I'd recommend KS Kuts in Clarksburg for anybody in MoCo and Southern Federick Co. I've been really pleased with the service there. Yesterday I brought my two youngest daughters there when I dropped off my buck. The owner came out to greet us, shook my hand, thanked me for my business, and joked around with the girls. He even remembered the littlest one from last year. Good people.
